Roasted Brussels Sprouts and SnapDragon Apples

Ingredients

  • Brussels sprouts - sliced about 1/4" thick - 4 Cups
  • Red onion - sliced about 1/4" thick - 1 Cup
  • Baby Bella mushrooms - sliced 1/4" thick - 1 Cup
  • SnapDragon apples - cored and cut into chunks - 2
  • Salt (Seneca Salts Matcha used here) - 1 tsp
  • Olive oil (optional) - 1-2 Tbsp
  • Pepper to taste -

Instructions

  1. Preheat oven to 450 degrees. Chop all of the vegetables, place in a bowl. Combine salt and oil, pour mixture over vegetables and mix to coat. Place veggies on a baking sheet and sprinkle with pepper. Cook for 10 minutes.
  2. While vegetables are cooking, chop apples. At the end of 10 minutes, stir the vegetables then pour the apples on top. Spread evenly on the pan. Return the pan to the oven and roast for an additional 10 minutes. Garnish with fresh apples and serve hot.
