Beet and SnapDragon Apple Bruschetta Bites

Beet and Apple Bruschetta Bites are an irresistible appetizer that looks gorgeous and fancy but is super easy to make. Toasted sliced baguette spread with creamy whipped ricotta and topped with a flavorful blend of earthy roast beets, tangy-crisp SnapDragon apples and fresh basil.

Ingredients

  • Baguettes -
  • Baguette - 1 sliced into 1/2 inch slices
  • Ricotta Cheese - 15 oz
  • Grated Romano Cheese - 1/4 cup
  • Olive Oil - 5 tbsp, divided
  • Lemon Zest - 1 lemon
  • Garlic Powder - 1/2 tsp
  • Freshly Ground Black Pepper - 1/2 tsp
  • Beet and SnapDragon Bruschetta -
  • Roasted Beets - 4 medium, diced small
  • Snapdragon Apples - 2 large, diced small
  • Olive Oil - 1 tbsp
  • Lemon Juice - 12 tbsp
  • Kosher Salt - 1/2 tsp
  • Freshly Ground Black Pepper - 1/4 tsp
  • Garlic Powder - 1/2 tsp
  • Basil - 12 large leaves, roughly chopped

Instructions

  1. Preheat the oven to 400 degrees F and line a sheet pan with parchment. Spread the baguette slices in an even layer on the pan and lightly drizzle with ¼ cup olive oil. Bake for 7 minutes and set aside to cool.
  2. While the baguette slices bake, combine ricotta cheese, Romano cheese, 1 Tablespoon olive oil, lemon zest, ½ teaspoon garlic powder, ¼ teaspoon black pepper in a large bowl. Use a hand mixer to whip this mixture for 2 minutes and spread a thin layer on each toasted baguette slice.
  3. In another large bowl, add beets, apples, 1 Tablespoon olive oil, lemon juice, salt, ½ teaspoon garlic powder and ¼ teaspoon black pepper and chopped basil. Toss until well combined.
  4. Top each baguette and whipped ricotta with a generous scoop of the bruschetta and serve immediately.
