Buttermilk Pancakes with SnapDragon® Apple Compote

Ingredients
- Pancakes -
- Buttermilk - 1 cup
- Eggs - 2 large
- Melted Butter - 4 tbsp
- Salt - a pinch
- Vanilla Extract - 1 tbsp
- Baking Powder - 2 tsp
- Sugar - 4 tbsp
- All-Purpose Flour - 1 1/2 cups
- Apple Compote -
- Snapdragon Apples - 2 (chopped)
- Cinnamon - 1/2 tsp
- Honey (optional) - 1 tsp
- Lemon Juice - 2 tsp
- Fresh Whipped Cream (optional) - for garnish
Instructions
- Preheat griddle to medium-low heat: Before making your pancake batter, preheat your pan or skillet to medium heat. Grease the pan with butter.
- To make pancake batter: Whisk together the eggs, buttermilk, melted butter, and vanilla in a large bowl until smooth. Add the flour, baking powder, and salt and mix until just combined. Do not overmix!
- Prepare apple compote: In a medium bowl, add the chopped SnapDragon apples, lemon juice, cinnamon, and honey. Mix until well combined and set aside.
- Cook the pancakes: Ladle some of the batter onto your greased pan and cook for 3-4 minutes or until bubbles form on top. Then flip and cook for another 2-3 minutes.
- Garnish with fresh whipped cream, and enjoy your pancakes topped with fresh apple compote!
