Buttermilk Pancakes with SnapDragon® Apple Compote

Ingredients

  • Pancakes -
  • Buttermilk - 1 cup
  • Eggs - 2 large
  • Melted Butter - 4 tbsp
  • Salt - a pinch
  • Vanilla Extract - 1 tbsp
  • Baking Powder - 2 tsp
  • Sugar - 4 tbsp
  • All-Purpose Flour - 1 1/2 cups
  • Apple Compote -
  • Snapdragon Apples - 2 (chopped)
  • Cinnamon - 1/2 tsp
  • Honey (optional) - 1 tsp
  • Lemon Juice - 2 tsp
  • Fresh Whipped Cream (optional) - for garnish

Instructions

  1. Preheat griddle to medium-low heat: Before making your pancake batter, preheat your pan or skillet to medium heat. Grease the pan with butter.
  2. To make pancake batter: Whisk together the eggs, buttermilk, melted butter, and vanilla in a large bowl until smooth. Add the flour, baking powder, and salt and mix until just combined. Do not overmix!
  3. Prepare apple compote: In a medium bowl, add the chopped SnapDragon apples, lemon juice, cinnamon, and honey. Mix until well combined and set aside.
  4. Cook the pancakes: Ladle some of the batter onto your greased pan and cook for 3-4 minutes or until bubbles form on top. Then flip and cook for another 2-3 minutes.
  5. Garnish with fresh whipped cream, and enjoy your pancakes topped with fresh apple compote!
