Easy Grain Bowls with SnapDragon Apples
Grain Bowl Meal Prep Tips
Everyone wants cooking to be easy, right? These tips make these easy grain bowls even easier to make.
- Cook your grains ahead of time. Your grains will stay good in the fridge all week so feel free to make them up to 5 days ahead of when you plan to enjoy your last bowl.
- Slice your apples the day of or the night before.
- Roast up double the veggies for multiple uses. The sweet potatoes would be wonderful in a variety of recipes like a breakfast hash so feel free to make more than the required amount.
- Top with your favorite protein, like white beans, roasted tofu, chickpeas or grilled chicken..

Ingredients
- INGREDIENTS -
- Olive Oil - 1 Tbsp
- Sweet Potato (medium, cut into cubes) - 2
- Pearl Couscous or other grains (cooked) - 4 cups
- Garbanzo Beans low sodium (drained and rinsed) - 1 can
- SnapDragon apples - 1
- Red Onion (thinly sliced) - 1/3 cup
- Feta Cheese - 2/3 cup
- Arugula - 1 1/2 cups
- DIJON DRESSING -
- Dijon Mustard - 2 Tbsp
- Apple Cider Vinegar - 1/4 cup
- Lemon Juice - 1 Tbsp
- Honey (or other sweetener) - 1 Tbsp
- Olive Oil - 1/4 cup
- Salt - 1/2 tsp
- Black Pepper - 1 tsp
- Garlic Powder - 1 tsp
Instructions
- Preheat oven to 400 degrees. Toss cubed sweet potatoes together with the olive oil on a large nonstick sheet pan. Roast for 15 minutes, flip sweet potatoes and roast for another 10 minutes until cubes are soft on the inside and slightly crispy on the outside.
- Whisk together all of the ingredients for the dijon dressing.
- In bowls or mason jars, scoop couscous onto the bottom of the jar or bowl and top with sliced apple, garbanzo beans, red onion, feta, roasted sweet potatoes and arugula. Pour dressing over when you're ready to serve. Enjoy!
- Stores well in the fridge for up to 5 days.
- *Tip: If you're meal prepping these, store the dressing separately and add the arugula after so it doesn't get soggy.
