Healthy Chicken Salad Recipe with Apples
This healthy chicken salad recipe features SnapDragon apples and uses Greek Yogurt to add a tangy flavor, more protein, and lessen the calories.
Ingredients
- Pecans, chopped - 1 cup
- Rotisserie Chicken, shredded (about 4 cups) - 1
- SnapDragon Apple, cored and chopped - 1
- Celery Ribs, diced - 4
- Red Onion - 1/4
- Crumbled Feta Cheese - 1/2 cup
- Salt - 1/2 tsp
- Ground Black Pepper - 1/2 tsp
- Italian Parsley, chopped - 1/4 cup
- FOR THE DRESSING: -
- 2% Plain Greek Yogurt - 1/2 cup
- Mayonnaise - 1/2 cup
- Dijon Mustard - 1 tbsp
- Apple Cider Vinegar - 1/4 cup
- TO MAKE SANDWICHES: -
- Baguette or Rolls -
- Sliced Cucumbers -
- Sliced Tomatoes -
- Green Leaf Lettuce -
Instructions
- Toast the pecans in a dry skillet until slightly more golden and fragrant. About 3 minutes.
- Dice the apples, veggies, and shred the chicken. Then mix all ingredients for the chicken salad together in a large bowl.
- Whisk all ingredients together for the dressing and pour over the chicken salad. Toss together to coat.
- To make sandwiches, simply serve on your favorite bread and top with sliced cucumbers, sliced tomatoes, and some green leaf lettuce.
