Healthy Chicken Salad Recipe with Apples

This healthy chicken salad recipe features SnapDragon apples and uses Greek Yogurt to add a tangy flavor, more protein, and lessen the calories.

Ingredients

  • Pecans, chopped - 1 cup
  • Rotisserie Chicken, shredded (about 4 cups) - 1
  • SnapDragon Apple, cored and chopped - 1
  • Celery Ribs, diced - 4
  • Red Onion - 1/4
  • Crumbled Feta Cheese - 1/2 cup
  • Salt - 1/2 tsp
  • Ground Black Pepper - 1/2 tsp
  • Italian Parsley, chopped - 1/4 cup
  • FOR THE DRESSING: -
  • 2% Plain Greek Yogurt - 1/2 cup
  • Mayonnaise - 1/2 cup
  • Dijon Mustard - 1 tbsp
  • Apple Cider Vinegar - 1/4 cup
  • TO MAKE SANDWICHES: -
  • Baguette or Rolls -
  • Sliced Cucumbers -
  • Sliced Tomatoes -
  • Green Leaf Lettuce -

Instructions

  1. Toast the pecans in a dry skillet until slightly more golden and fragrant. About 3 minutes.
  2. Dice the apples, veggies, and shred the chicken. Then mix all ingredients for the chicken salad together in a large bowl.
  3. Whisk all ingredients together for the dressing and pour over the chicken salad. Toss together to coat.
  4. To make sandwiches, simply serve on your favorite bread and top with sliced cucumbers, sliced tomatoes, and some green leaf lettuce.
