SnapDragon Antioxidant Power Salad w/ Ginger Citrus Dressing

  • SnapDragon Apples, sliced thick or chopped - 1-2
  • Snow Peas - 1 Cup
  • Small Zucchini, sliced on the bias - 1
  • Red Onion, thinly sliced - 1/2
  • Cup fresh Bean Sprouts - 1/2 Cup
  • Cilantro leaves - 1 Tbsp
  • Asian Ginger Dressing -
  • DRESSING INGREDIENTS -
  • Peanut or Canola Oil - 1/4 Tbsp
  • Rice Wine Vinegar - 2 Tbsp
  • Coconut Sauce - 2 Tbsp
  • Freshly grated Ginger - 2 tsp
  • Low Sodium, Soy Sauce - 2 tsp
  • Sesame Oil - 1 1/2 tsp
  • Agave Syrup - 1 tsp
  • Minced Garlic - 1 tsp

Instructions

  1. Combine spring greens, snow peas, zucchini slices, red onion, and cilantro leaves in a bowl. Assemble bean sprouts and then apple slices/chunks on top. In separate bowl, combine dressing ingredients until well blended. Drizzle dressing over top of salad and enjoy!
