SnapDragon Antioxidant Power Salad w/ Ginger Citrus Dressing

- SnapDragon Apples, sliced thick or chopped - 1-2
- Snow Peas - 1 Cup
- Small Zucchini, sliced on the bias - 1
- Red Onion, thinly sliced - 1/2
- Cup fresh Bean Sprouts - 1/2 Cup
- Cilantro leaves - 1 Tbsp
- Asian Ginger Dressing -
- DRESSING INGREDIENTS -
- Peanut or Canola Oil - 1/4 Tbsp
- Rice Wine Vinegar - 2 Tbsp
- Coconut Sauce - 2 Tbsp
- Freshly grated Ginger - 2 tsp
- Low Sodium, Soy Sauce - 2 tsp
- Sesame Oil - 1 1/2 tsp
- Agave Syrup - 1 tsp
- Minced Garlic - 1 tsp
Instructions
- Combine spring greens, snow peas, zucchini slices, red onion, and cilantro leaves in a bowl. Assemble bean sprouts and then apple slices/chunks on top. In separate bowl, combine dressing ingredients until well blended. Drizzle dressing over top of salad and enjoy!
