SnapDragon Apple, Arugula and Crumbly Blue Naan Pizza

SnapDragon® Apple, Arugula and Crumbly Blue Naan Pizza is a sweet and savory appetizer or light lunch. Made with garlic naan flatbread with tangy crumbled blue cheese, peppery arugula dressed with lemon and crisp SnapDragon apples with a light drizzle of balsamic glaze.

Ingredients

  • Flatbreads -
  • Garlic Naan - 2 pieces
  • Olive Oil - 2 tbsp
  • Grated Romano Cheese - 2 pinches
  • Crumbled Blue Cheese - 4 heaping tbsp
  • Toppings -
  • Baby Arugula - 1 cup
  • Olive Oil - 1 tsp
  • Fresh Lemon Juice - 1 tbsp, divided
  • Kosher Salt - 1 pinch
  • Freshly Ground Black Pepper - 1 pinch
  • SnapDragon Apple - 1 thinly sliced
  • Balsamic Glaze - 1-2 tsp

Instructions

  1. Preheat the oven to 400 degrees F and line a sheet pan with parchment.
  2. Place the naan onto the sheet pan. Drizzle each garlic naan with 1 Tablespoon oil, and sprinkle with 1 pinch of Romano cheese. Sprinkle crumbled blue cheese evenly over the top of each naan. Bake for 10 minutes and remove from the oven to cool slightly.
  3. While the naan bakes, gently mix the arugula with olive oil, 1 Tablespoon of lemon juice, salt and pepper until evenly coated and set aside. Also toss the thinly sliced SnapDragon apple in the other Tablespoon of lemon juice.
  4. Divide the dressed arugula between the two pieces of naan and scatter the thinly sliced apples over each naan pizza.
  5. Lightly drizzle with balsamic glaze and cut each naan pizza into 4 pieces. Serve immediately.
