Toast pecans in a 350 degree oven with a pinch of salt for 10-12 minutes. Once cooled, break into small pieces.
Cut cauliflower into small florets and toss in a bowl with EVOO, salt, and pepper. Roast in a 400 degree oven for 10 minutes, or until golden brown.
Slice baguette into 1/2 inch thick crostinis. Spray cookie sheet with cooking spray and arrange crostinis in one layer. Toast in 350 degree oven for 3-5 minutes, or until desired toastiness.
Core SnapDragon apples and quarter. Thinly slice the quarters (should look like bite-size triangles).
Assemble the crostini: baguette slice, spread thin layer of boursin cheese, few small pieces of cauliflower and pecans, SnapDragon apples.
