SnapDragon Apple Nachos

Ingredients

  • large SnapDragon apples, cored and thinly sliced (about 1/4-inch thick) - 2
  • 6 pitted Medjool dates - 1/2 cup
  • water - 1/2 cup
  • vanilla extract - 1/2 tsp
  • tahini, cashew butter, or melted coconut oil - 1 tbsp
  • pinch salt -
  • runny/natural almond or peanut butter - 2- 3 tbsp
  • raisins - 1/4 cup
  • shelled pumpkin seeds - 1/4 cup

Instructions

  1. Blend the dates, water, vanilla, tahini, cashew butter, or melted coconut oil, and salt together in a powerful blender or food processor till smooth. This is your date caramel.
  2. Arrange the apple slices on a serving plate. Drizzle them with the almond or peanut butter and the date caramel. Top with the raisins and pumpkin seeds. Enjoy!
