SnapDragon Vegan Apple Tart

Ingredients

  • Puff Pastry sheet (we used vegan) - 1 sheet
  • SnapDragon apples (thinly sliced) - 3-4
  • Juice of 1/2 Lemon -
  • Sugar - 1/4 cup
  • Vegan Butter (melted, divided) - 2 tbsp
  • Cinnamon - 1/2 tsp
  • Nutmeg - a pinch
  • Almonds (ground) - 2 tbsp
  • Apricot preserves (warmed) - 2 tbsp

Instructions

  1. Slice the apples thinly, then toss with lemon juice, sugar, 1 tbsp melted butter, cinnamon and nutmeg until well coated.
  2. Carefully score the puff pastry about ½” around the border, but don’t cut all the way through.
  3. Sprinkle the almonds on pastry, avoiding the edges.
  4. Arrange the apples, then bake at 375˚F for 35 minutes.
  5. Remove from the oven and brush with apricot preserves and dust with powdered sugar.
  6. Cool and enjoy!
