Whole-Grain SnapDragon Apple Cinnamon Coffee Cake

Ingredients

  • Whole-Grain SnapDragon Apple Cinnamon Coffee Cake -
  • white whole-wheat flour - 1 3/4 cups
  • brown sugar - 1/2 cup
  • milk of choice - 1/2 cup
  • unsweetened applesauce - 1/2 cup
  • cinnamon - 2 tsp
  • SnapDragon apple-chopped - 1 cup
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • lemon juice - 2 tsp
  • vanilla extract - 2 tsp
  • Cinnamon Streusel Topping -
  • cinnamon - 1 tsp
  • white whole-wheat flour - 1/4 cup
  • brown sugar - 1/4 cup
  • melted butter - 2 tsp

Instructions

  1. Preheat oven to 350 degrees. Spray a loaf pan or small glass baking dish with nonstick spray.
  2. Mix together all ingredients for cinnamon coffee cake and stir well.
  3. Mix together ingredients for cinnamon streusel topping until crumbly.
  4. Pour batter into pan, top with streusel mix and bake for about 30 minutes until cake is cooked through.
  5. Let cool for about 15 minutes and slice.
